Make the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for about 8-10 minutes or until lightly golden. Remove from oven and let it cool while you prepare the filling.

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in granulated sugar and mix until well combined. Add sour cream and vanilla extract, then mix until smooth.

Add Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.
Baking

Bake the Cheesecake
Pour the filling over the cooled crust. Bake in the oven for 55-60 minutes or until the edges are set but the center is still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight, to set completely.
