Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Cut the pork belly into bite-sized cubes, about 1-inch each.

Mix the Marinade
In a bowl, combine brown sugar, soy sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Stir until well combined.

Marinate the Pork
Place the pork belly cubes in a large zip-lock bag or a bowl. Pour the marinade over the pork and seal or cover. Let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Bake the Pork Belly Bites
Spread the marinated pork belly cubes on a lined baking sheet. Bake in the preheated oven for about 2 hours, turning halfway through, until they are tender and caramelized.

Remove from the oven and let them cool slightly. Serve warm with your favorite dipping sauce.
