Omelet Preparation

    Prepare the Seafood

    In a skillet, heat half the oil or butter over medium heat. Add the fresh seafood and sauté until cooked through, about 3-5 minutes. Remove from heat and set aside.

    Make the Omelet

    In a bowl, whisk the eggs until well blended. In the same skillet, add the remaining oil or butter and pour in the eggs. Cook on medium-low heat until the edges start to set, about 2 minutes.

    Fill the Omelet

    Once the omelet is mostly set, sprinkle the cooked seafood and pepperjack cheese over one half of the omelet. Carefully fold the other half over the filling and cook for an additional 2 minutes, until the cheese is melted.

    Serve with Creole Sauce

    Transfer the omelet to a plate and top with your favorite Creole sauce.
