Prepare the Creamed Spinach

In a skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted. Stir in cream cheese until melted and smooth. Season with salt and pepper. Set aside.

Poach the Eggs

Bring a pot of water to a simmer. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes until the whites are set but yolks are still runny. Remove with a slotted spoon and set on a paper towel.

Cook the Shrimp Sauce

In the same skillet, melt the remaining tablespoon of butter over medium heat. Add shrimp and cook until pink. Pour in the white wine and simmer until slightly reduced. Season with salt and pepper.

Toast the English Muffins

Slice the English muffins in half and toast them until golden brown.

Assemble the Breakfast

On each toasted muffin half, layer the creamed spinach, top with a poached egg, and drizzle the shrimp sauce over the top. Serve with a side of cheese grits or hashbrowns.
