    Prepare the Beans

    Rinse the red beans thoroughly under cold water. In a large pot, soak the beans overnight in water. Drain and set aside.

    Cook the Vegetables

    In a large pot, heat the olive oil over medium heat. Add diced onion, green bell pepper, and celery. Sauté until the vegetables are softened, about 5 minutes.

    Add Beans and Broth

    Stir in the minced garlic, soaked beans, chicken broth, bay leaves, and Cajun seasoning. Bring to a boil, then reduce heat to low and simmer for about 1 to 1.5 hours, or until the beans are tender.

    Cook the Rice

    In a separate pot, cook the long-grain white rice according to package instructions. Set aside once done.

    Grill the Sausage

    While the beans are cooking, preheat a grill or grill pan over medium heat. Grill the Andouille sausage for about 5-7 minutes on each side, or until browned and cooked through. Remove from heat and slice.

    Serve

    To serve, place a heaping bowl of red beans over a scoop of rice. Top with sliced grilled Andouille sausage and garnish with sliced green onions. Enjoy!
