    Prepare the Dough

    In a large mixing bowl, combine the flour, granulated sugar, instant yeast, and salt. In a separate bowl, whisk together the milk, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, mixing until a soft dough forms.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Roll Out the Dough

    Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out to about 1/4 inch thick. Cut the dough into squares or rectangles, approximately 2x2 inches.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Beignets

    Carefully drop the cut dough into the hot oil, a few at a time, and fry until golden brown on both sides, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

    While still warm, dust the beignets generously with powdered sugar. Serve immediately.
