Prepare the Red Beans and Rice
In a pot, combine red beans, rice, water, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the rice and beans are tender.
Coat the Catfish and Chicken
In a bowl, combine the special spice mixture with a little salt and pepper. Coat the catfish fillets and chicken breasts evenly with the spice mixture.
Sear the Catfish and Chicken
In a large skillet, heat the vegetable oil over medium-high heat. Add the coated catfish and chicken to the skillet, cooking for about 4-5 minutes on each side or until golden brown and cooked through.
Assemble the Platter
Once the beans and rice are cooked, serve them on a large platter. Top with the seared catfish and chicken. Add any specialty toppings as desired.
