Prepare the Tilapia
Season the tilapia fillets with Cajun seasoning, olive oil, and lemon juice. Let sit for 15 minutes.

Sauté the Ingredients
In a separate skillet, melt butter over medium heat. Add garlic, scallions, sun-dried tomatoes, and artichokes. Sauté for 2-3 minutes.

Add Crawfish and Wine
Add crawfish tails and white wine to the skillet. Let simmer for 5 minutes until heated through.

In a skillet, heat olive oil over medium heat. Add Tasso ham, shrimp, roasted red peppers, spinach, and shiitake mushrooms. Sauté until shrimp is pink and cooked through.
