Method
Prepare the Salmon

Season the Salmon
Rub the salmon fillets with olive oil and sprinkle with blackening seasoning on both sides.

Cook the Salmon
Grill or blacken the seasoned salmon fillets over medium-high heat for about 4-5 minutes per side, or until cooked through.
Prepare the Crawfish Sauce

Sauté Ingredients
In a skillet over medium heat, melt 2 tablespoons of butter. Add crawfish, artichokes, sun-dried tomatoes, and scallions. Sauté for about 3-4 minutes.

Add Liquid
Pour in the white wine and lemon juice, bring to a simmer, and let reduce for 3-4 minutes.

Finish the Sauce
Stir in the remaining butter, salt, and black pepper. Remove from heat.
Prepare the Shrimp Sauce

Season and Cook
Season with salt and black pepper and continue to cook until shrimp are opaque and cooked through.
