    Prepare the Crust

    Preheat the oven to 350°F (175°C). Crush the Oreo cookies into fine crumbs using a food processor or by placing them in a zip-top bag and using a rolling pin. In a mixing bowl, combine the crushed cookies with melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the sugar and continue mixing until well combined. Add the sour cream, vanilla extract, and eggs, mixing until just incorporated. Be careful not to overmix.

    Combine and Bake

    Fold in roughly chopped Oreo cookies into the cheesecake mixture. Pour the filling over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.

    Turn off the oven and crack the oven door, letting the cheesecake cool inside for about an hour. Once cooled, refrigerate for at least 4 hours or overnight to set completely.
