Crawfish Sauce
Garlic Mashed Potatoes

Prepare Mahi Mahi

Season and Cook
Rub the Mahi Mahi fillets with Cajun seasoning. Heat olive oil in a skillet over medium-high heat and cook the fillets for about 4-5 minutes per side until cooked through and blackened. Set aside.
Prepare Crawfish Sauce

Sauté Ingredients
In the same skillet, add butter and sauté scallions, artichokes, and sun-dried tomatoes for about 3 minutes. Add crawfish tails and white wine, and simmer for another 5 minutes. Stir in lemon juice, then season with salt and black pepper to taste.
Prepare Garlic Mashed Potatoes

Prepare Shrimp Sauce (Optional)

Cook Shrimp
In a skillet, heat olive oil and sauté tasso ham for 2 minutes. Add shrimp, roasted red peppers, and shiitake mushrooms, cooking until shrimp are pink. Add spinach and stir until wilted. Season with salt and black pepper.
Prepare Rice (if choosing Crawfish sauce)

Cook Rice
In a saucepan, bring water and salt to a boil. Add rice, reduce heat to low, cover, and simmer for about 18-20 minutes until water is absorbed.
