    Prepare the Base

    In a large pot or Dutch oven, heat olive oil over medium heat. Add the diced chicken and sausage. Cook until browned, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped bell pepper, onion, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

    Combine Ingredients

    Add the diced tomatoes (with juice), chicken broth, rice, Cajun seasoning, salt, and black pepper to the pot. Stir to combine.

    Cook the Rice

    Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 20 minutes.

    Add Shrimp

    After 20 minutes, stir in the shrimp and cover again. Cook for an additional 5 minutes, or until the shrimp are pink and cooked through.

    Serve

    Remove from heat, fluff the jambalaya with a fork, and garnish with chopped green onions before serving.
