Prepare the Green Tomatoes
Wash and slice the green tomatoes into 1/4-inch thick rounds. Sprinkle salt on both sides and let them sit for 10 minutes to draw out moisture.

Prepare the Breading Station
In one bowl, add the flour. In a second bowl, pour the buttermilk. In a third bowl, combine the cornmeal, black pepper, cayenne pepper, and a pinch of salt.

Bread the Tomatoes
Dredge each tomato slice in flour, then dip in buttermilk, and finally coat with the cornmeal mixture. Place the breaded tomatoes on a wire rack.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded tomatoes in batches, frying for about 3-4 minutes on each side until golden brown. Remove and drain on paper towels.

Make the Tomato Remoulade
In a medium bowl, mix together mayonnaise, ketchup, Worcestershire sauce, dijon mustard, and hot sauce until well combined.

On a plate, create a bed of baby lettuces, top with fried green tomatoes, and drizzle with tomato remoulade. Serve immediately.
