Preparation
1. Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into even-sized strips, about 1/4 inch thick.
2. Soak the Potatoes
Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.
3. Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).
4. Fry the Potatoes
Carefully add the dry potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for 5-7 minutes or until golden brown and crispy.
5. Drain and Season
Using a slotted spoon, remove the fries and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, and garlic powder to taste.
6. Serve
Serve the fries immediately while hot, either plain or with your favorite dipping sauces.
