Method
Cooking the Rice

Prepare the Rice
In a medium pot, bring 4 cups of water to a boil. Add 2 cups of long grain white rice and a pinch of salt. Reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
Making the Creole Sauce

Sauté the Vegetables
In a large skillet or pot, heat 2 tablespoons of olive oil over medium heat. Add the diced bell peppers, onion, and celery (the Cajun trinity) and sauté for about 5-7 minutes until softened. Add minced garlic and cook for an additional minute.

Add Proteins and Sauce
Stir in the diced chicken and cook until browned, about 5 minutes. Then, add the shrimp and crawfish, cooking until shrimp is pink and opaque. Pour in the crushed tomatoes, add the Creole seasoning, bay leaves, salt, and pepper. Stir well to combine.

Simmer
Reduce the heat to low, cover the skillet, and let the mixture simmer for 15-20 minutes, stirring occasionally. Remove bay leaves before serving.
