Prepare the Base
In a large skillet or saucepan, heat the olive oil over medium heat. Add the diced onion, green bell pepper, and celery (the Cajun trinity) and sauté for about 5 minutes, until softened.

Add Garlic and Spices
Stir in the minced garlic and cook for an additional minute until fragrant. Then add the canned diced tomatoes, tomato sauce, chicken broth, Creole seasoning, bay leaves, salt, and black pepper. Mix well.

Simmer the Sauce
Bring the mixture to a low simmer, cover, and let it cook for about 15 minutes, stirring occasionally.

Add Crawfish
After 15 minutes, add the crawfish tails to the sauce. Cook for an additional 5-7 minutes until the crawfish are heated through.

Serve
Remove the bay leaves. Serve the Crawfish Creole over cooked white rice and garnish with chopped fresh parsley.
