Cook the Tortellini
Bring a large pot of salted water to a boil. Add the tri-colored cheese tortellini and cook according to package instructions, usually about 5-7 minutes until al dente. Drain and set aside.

Prepare the Chicken
Season the blackened chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked. Remove from heat and slice.

Cook the Sausage and Vegetables
In the same skillet, add the sliced Andouille sausage and cook until browned. Add the mushrooms, artichokes, and roasted red peppers. Sauté for about 5 minutes until the vegetables are tender.

Make the Sauce
Add the tomato sauce, heavy cream, Cajun seasoning, and grated Romano cheese to the skillet. Stir well and let simmer for about 5 minutes, allowing the sauce to thicken slightly.

Combine and Serve
Add the cooked tortellini to the skillet and toss to coat in the sauce. Serve the Cajun Pasta topped with sliced blackened chicken and additional Romano cheese if desired.
