Preparation of Pork Tenderloin

Season the Pork
Rub the pork tenderloin with the Special Spice Mixture and let it marinate for at least 30 minutes.

Stir in black beans, chicken broth, cumin, salt, and pepper. Simmer for 10 minutes.
Chipotle Chili Cream

Make the Cream
In a bowl, mix sour cream with chipotle peppers until well combined. Set aside.
Fried Plantains

Prepare the Plantains
Peel and slice plantains diagonally into 1/2-inch thick pieces.

Heat vegetable oil in a frying pan over medium heat. Fry plantains until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.
