Method

Preparation of Pork Tenderloin

    Season the Pork

    Rub the pork tenderloin with the Special Spice Mixture and let it marinate for at least 30 minutes.

    Sear the Pork

    Heat olive oil in a skillet over medium-high heat. Add the pork tenderloin and sear on all sides until blackened, about 8-10 minutes. Remove from the skillet and let it rest.

Chorizo Black Bean Sauce

    Cook the Chorizo

    In the same skillet, add chorizo and cook until browned. Add diced onion and minced garlic; sauté until onion is translucent.

    Add Beans and Broth

    Stir in black beans, chicken broth, cumin, salt, and pepper. Simmer for 10 minutes.

Chipotle Chili Cream

    Make the Cream

    In a bowl, mix sour cream with chipotle peppers until well combined. Set aside.

Fried Plantains

    Prepare the Plantains

    Peel and slice plantains diagonally into 1/2-inch thick pieces.

    Fry the Plantains

    Heat vegetable oil in a frying pan over medium heat. Fry plantains until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Pineapple Salsa

    Prepare the Salsa

    In a bowl, combine diced pineapple, red onion, chopped cilantro, lime juice, and salt. Mix well.

Assembly
