    Prepare the Red Beans

    Rinse the red beans and soak them overnight in water. Drain and set aside.

    Cook the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, celery, and minced garlic. Sauté until softened, about 5 minutes.

    Add the Beans and Broth

    Add the soaked red beans, chicken broth, bay leaf, cayenne pepper, salt, and black pepper to the pot. Bring to a boil, then reduce heat to low and simmer for about 1 hour, or until beans are tender.

    Cook the Rice

    While the beans are cooking, prepare the rice according to package instructions in a separate pot.

    Grill the Sausage

    Preheat a grill or grill pan over medium-high heat. Grill the andouille sausage links for about 5-7 minutes, or until heated through and grill marks appear. Slice the sausage into bite-sized pieces.

    Assemble the Dish

    Serve the red beans over a bed of rice and top with the grilled andouille sausage pieces.
