Method

Cake Preparation

  1. 1

    Preheat the oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

  2. 2

    Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until combined.

  3. 3

    Cream butter

Add the softened unsalted butter to the dry ingredients and beat with an electric mixer on medium speed until the mixture resembles coarse crumbs.

  4. 4

    Add wet ingredients

In a separate bowl, beat the eggs, milk, and vanilla extract together. Gradually add this wet mixture to the dry ingredients while mixing, until just combined.

  5. 5

    Pour into pans

Divide the batter evenly between the prepared cake pans.

  6. 6

    Bake

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

  7. 7

    Cool

Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, turn them out onto a wire rack to cool completely.

Frosting Preparation

  1. 8

    Make frosting

In a large mixing bowl, beat the softened unsalted butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.

  2. 9

    Add cream and vanilla

Add the heavy cream and vanilla extract to the frosting mixture, and beat on high speed until light and fluffy.

Assembling and Decorating

  1. 10

    Frost the cake

Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top, then place the second layer on top and frost the top and sides of the cake.

  2. 11

    Decorate

Optional: Decorate the top of the cake with fresh berries and chocolate shavings as desired.
