Soup Preparation

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.

    Add Garlic and Other Vegetables

    Stir in the minced garlic, diced carrots, and diced celery. Cook for an additional 5 minutes, stirring occasionally.

    Incorporate Tomatoes and Broth

    Add the canned diced tomatoes (with juice) and vegetable broth to the pot. Bring the mixture to a boil.

    Add Artichokes and Seasonings

    Once boiling, reduce the heat to a simmer and add the chopped artichoke hearts, dried oregano, dried basil, salt, and black pepper. Stir to combine.

    Cover the pot and let the soup simmer for 20 minutes, stirring occasionally to prevent sticking.
