Tomato Artichoke Soup

Waffled Grilled Cheese

Prepare the Bread and Cheese
Take 4 slices of sourdough bread. Layer 2 slices of cheddar and 2 slices of Swiss cheese between two slices of sourdough.

Butter the Bread
Spread butter on the outer sides of the sourdough bread slices.

Preheat the Waffle Maker
Plug in and preheat your waffle maker according to the manufacturer's instructions.

Waffle the Sandwich
Place the sandwich in the preheated waffle maker and sprinkle grated parmesan cheese on the outside. Close the waffle maker and cook until the bread is golden brown and the cheese is melted, about 5-7 minutes.

Remove and Slice
Carefully remove the sandwich from the waffle maker and let it cool for a minute before slicing it in half.
Tomato Artichoke Soup

Add Tomatoes and Artichokes
Stir in the canned crushed tomatoes and artichoke hearts. Cook for another 5 minutes.

Add Broth and Seasonings
Pour in the vegetable broth, add dried basil, salt, and black pepper. Bring the soup to a simmer.

Blend the Soup
Using an immersion blender or a regular blender, blend the soup until smooth. If using a regular blender, be sure to let the soup cool slightly before blending.

Serve Hot
Ladle the soup into bowls and serve hot alongside the waffled grilled cheese.
