Prepare the Vegetables
Wash and chop the bell peppers, broccoli, carrots, snow peas, and zucchini into bite-sized pieces.

Make the Sauce
In a small bowl, combine soy sauce, sesame oil, minced garlic, minced ginger, and cornstarch. Stir until the cornstarch is dissolved and set aside.

Heat the Oil
In a large skillet or wok, heat vegetable oil over medium-high heat until shimmering.

Stir-Fry the Vegetables
Add the chopped vegetables to the hot skillet. Stir-fry for about 5-7 minutes, or until they are tender-crisp.

Add the Sauce
Pour the prepared sauce over the stir-fried vegetables. Continue to cook for an additional 2-3 minutes, stirring frequently until the sauce thickens.

Season to Taste
Add salt and black pepper to taste, adjusting according to your preference.

If desired, sprinkle sesame seeds over the top and serve immediately.
