    Make the Crepe Batter

    In a mixing bowl, combine the garbanzo flour, water, olive oil, and salt. Whisk until smooth and let sit for 10 minutes to hydrate the flour.

    Cook the Crepes

    Heat a non-stick skillet over medium heat. Lightly grease it with olive oil. Pour about 1/4 cup of the batter into the skillet, tilting the pan to spread it evenly. Cook for 2-3 minutes or until the edges start to lift and the bottom is golden brown. Flip and cook for an additional 1-2 minutes. Repeat with the remaining batter.

    Sauté the Vegetables

    In a separate pan, heat a small amount of olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Add the sliced mushrooms and cook until tender, about 5 minutes. Finally, add the spinach and cook until wilted, about 2 minutes. Season with salt and pepper to taste.

    Assemble the Crepes

    Spread a layer of hummus on each crepe, followed by a dollop of vegan jalapeño pesto. Add the sautéed onion, mushrooms, and spinach mixture on top. Slice the avocado and arrange it over the filling. Sprinkle with power seeds for added crunch.
