Preparation

  1. 1

    Prepare the Vegetables

Chop the tomatoes into bite-sized pieces, drain and rinse the artichoke hearts, mince the garlic cloves, and finely chop the onion. Set aside.

  2. 2

    Prepare the Herbs

Wash the fresh basil leaves and tear them into smaller pieces.

Cooking

  1. 3

    Sauté Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion becomes translucent, about 5 minutes.

  2. 4

    Add Tomatoes and Artichokes

Stir in the chopped tomatoes and artichoke hearts to the pot. Cook for another 5-7 minutes until the tomatoes start to soften.

  3. 5

    Add Broth and Seasonings

Pour in the vegetable broth and add the salt, black pepper, and red pepper flakes. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes.

  4. 6

    Finish with Basil and Balsamic

Stir in the torn basil leaves and balsamic vinegar. Let simmer for an additional 5 minutes, then remove from heat.

Serving

  1. 7

    Serve

Ladle the soup into bowls and serve hot. Enjoy your Tomato Artichoke soup without croutons!
