Omelette Preparation

    Prepare the Sausage

    In a skillet over medium heat, add the pork sausage. Cook until browned and cooked through, breaking it into small pieces with a spatula, about 5-7 minutes. Remove from the skillet and set aside.

    Caramelize the Onions

    In the same skillet, add 1 tablespoon of olive oil. Add the sliced onion and a pinch of salt. Cook over medium-low heat, stirring occasionally, until the onions are caramelized, about 10-15 minutes. Remove from heat.

    Prepare the Eggs

    In a bowl, crack the 4 eggs. Add salt and black pepper to taste. Whisk until well combined.

    Cooking the Omelette

    In the same skillet, add the whisked eggs over medium heat. Allow the eggs to cook undisturbed for a few minutes until the edges start to set. Then, gently lift the edges with a spatula, tilting the skillet to allow the uncooked eggs to flow to the edges.

    Add Fillings

    Once the eggs are nearly set but still slightly runny on top, add the cooked sausage, caramelized onions, chopped fresh herbs, and crumbled goat cheese on one half of the omelette. Fold the other half over the fillings and cook for another minute until the cheese starts to melt.

    Serve the Omelette

    Carefully slide the omelette onto a plate. Cut in half if desired.

Toast and Salad Preparation

    Toast the Bread

    While the omelette is cooking, toast the slices of bread in a toaster or on a skillet until golden brown.

    Prepare the Arugula Salad

    In a bowl, toss the arugula with the house vinaigrette until lightly coated.

    Plate the Dish

    Serve the omelette alongside the toasted bread and a side of arugula salad.
