Method

Waffle Batter

  1. 1

    Prepare the Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.

  2. 2

    Prepare the Wet Ingredients

In another bowl, beat the eggs and then add the pumpkin puree, milk, vegetable oil, and vanilla extract. Mix until well combined.

  3. 3

    Combine Ingredients

Pour the wet ingredients into the dry ingredients. Stir until just combined; be careful not to overmix.

  4. 4

    Preheat Waffle Iron

Preheat your waffle iron according to the manufacturer's instructions.

  5. 5

    Cook the Waffles

Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown. Repeat until all batter is used.

Sugared Pecans

  1. 6

    Prepare the Pecans

In a skillet over medium heat, combine the pecans, granulated sugar, ground cinnamon, salt, and water.

  2. 7

    Cook the Pecans

Stir continuously until the sugar dissolves and the mixture becomes syrupy. Continue cooking until the pecans are nicely coated and toasted, about 5-7 minutes.

  3. 8

    Cool the Pecans

Remove from heat and spread the pecans out on a parchment-lined baking sheet to cool.

Spiced Butter

  1. 9

    Prepare the Spiced Butter

In a small bowl, soften the unsalted butter and mix in the ground cinnamon and ground nutmeg until well blended.

Serving

  1. 10

    Serve the Waffles

Top the waffles with the spiced butter, a generous drizzle of maple syrup, and the sugared pecans. Garnish with fresh fruit as desired.
