Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, salt, and sugar until well combined.

    Mix Wet Ingredients

    In another bowl, combine the pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until smooth.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

Baking

    Bake the Bread

    Pour the batter into the prepared loaf pan. Sprinkle the pepitas evenly on top. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

    Once baked, remove the pumpkin bread from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Making Maple Icing

    Prepare the Icing

    In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth and drizzleable. Adjust the consistency with more milk if needed.

Serving

    Once the pumpkin bread is completely cool, drizzle the maple icing over the top and slice to serve.
