Mixing the Dough
In a large mixing bowl, combine the all-purpose flour, bread flour, sugar, and salt. Mix well.

Adding Starter and Water
Add the active sourdough starter and water to the dry ingredients. Stir with a wooden spoon or spatula until a shaggy dough forms.

Kneading the Dough
Turn the dough onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.

Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.

Shaping the Dough
Once the dough has risen, gently deflate it and turn it out onto a floured surface. Shape it into a loaf by flattening it into a rectangle and rolling it tightly.

Preheat the Oven
About 30 minutes before baking, preheat your oven to 450°F (230°C).

Baking the Loaf
Once preheated, place the loaf in the oven. Bake for 30-35 minutes or until the crust is golden brown and sounds hollow when tapped on the bottom.

Remove the loaf from the oven and let it cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
