    Clean and slice the mushrooms. Halve the cherry tomatoes. Rinse the spinach leaves and set aside.

    In a medium skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for about 3-4 minutes, until they are softened. Add halved cherry tomatoes and spinach, cooking until spinach is wilted, about 2 minutes. Season with salt and black pepper. Remove from heat.

    In a bowl, crack the eggs and whisk them until well combined. You can add a pinch of salt and pepper to the eggs for extra flavor.
