Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in the marinade and let them sit for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat the grill to medium-high heat, ensuring the grates are clean and lightly oiled.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade, letting the excess drip off. Place the fillets on the grill and cook for 4-6 minutes on each side, or until the salmon flakes easily with a fork.

Preparing the Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and slice the zucchini and bell peppers. Trim the ends off the asparagus.

  2. 5

    Season the Vegetables

In a large bowl, toss the zucchini, bell peppers, and asparagus with olive oil, salt, and black pepper.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once everything is grilled, place the salmon fillets on a serving plate, and arrange the seasonal vegetables around them.

  2. 8

    Garnish

Optionally, squeeze additional lemon juice over the salmon and vegetables before serving for extra flavor.
