    Beat the Eggs

    In a bowl, crack the three pasture-raised eggs. Add salt and black pepper. Whisk together until well combined and slightly frothy.

    Prepare the Filling

    Choose your desired filling options. If using cheese, tomatoes, or herbs, prepare them by shredding, dicing, or chopping respectively.

Cooking

    Heat the Pan

    Place a non-stick skillet over medium heat. Add the unsalted butter and allow it to melt, swirling it around to coat the bottom of the pan.

    Cook the Omelette

    Once the butter is bubbling but not browned, pour the beaten eggs into the skillet. Stir gently with a spatula to create soft curds. As the eggs begin to set, reduce the heat to low.

    Add Fillings

    When the omelette is mostly set but still slightly runny on top, add arugula and your chosen fillings (cheese, tomatoes, herbs) evenly over one half of the omelette.

    Fold and Finish

    Using the spatula, carefully fold the omelette in half over the fillings. Allow it to cook for an additional minute or until the cheese is melted and eggs are fully cooked to your liking.
