Method

Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water (110°F/43°C) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, whisk together the flour and salt.

  3. 3

    Combine Wet Ingredients

In a saucepan, heat the milk and butter until melted. Allow to cool slightly, then mix in the activated yeast mixture.

  4. 4

    Form the Dough

Add the wet ingredients to the dry ingredients and mix until a soft dough forms. If using honey, add it at this stage.

  5. 5

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

  6. 6

    First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Cooking Preparation

  1. 7

    Shape the Muffins

Once the dough has risen, punch it down and turn it onto a lightly floured surface. Roll out to about 1 inch thick. Cut out rounds using a biscuit cutter or a glass.

  2. 8

    Prepare for Cooking

Sprinkle cornmeal on a baking sheet and place the cut muffins on top. Cover with a cloth and let rise for another 30 minutes.

  3. 9

    Cook the Muffins

Preheat a skillet or griddle over medium heat. Cook the muffins for about 5-7 minutes on each side until golden brown and cooked through.

  4. 10

    Cool and Serve

Remove the muffins from the skillet and let them cool on a wire rack before slicing and serving. Enjoy toasted with butter or your favorite toppings!
