Tomato Artichoke Soup

    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes and Artichokes

    Pour in the canned diced tomatoes (with juice) and add the artichoke hearts. Stir to combine.

    Add Broth and Seasonings

    Pour in the vegetable broth and add dried basil, salt, and black pepper. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.

    Blend the Soup

    Using an immersion blender, blend the soup until smooth. Alternatively, blend in batches using a standard blender.

    Serve

    Taste and adjust seasoning if necessary. Ladle soup into bowls and serve warm.

Curried Red Lentil Soup

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion and diced carrot, and sauté until the onion is translucent, about 5-7 minutes. Stir in minced garlic and cook for another minute.

    Add Lentils and Spices

    Add the rinsed red lentils and curry powder to the pot. Stir well to coat the lentils with the spices.

    Add Broth and Coconut Milk

    Pour in the vegetable broth and coconut milk. Bring to a boil, then reduce heat to a simmer.

    Cook the Soup

    Simmer for about 25-30 minutes, stirring occasionally, until the lentils are tender and the soup has thickened.

    Blend and Serve

    If desired, use an immersion blender to blend the soup until smooth. Adjust seasoning with salt and black pepper to taste. Serve warm.
