Salad Preparation

    Prepare the Chicken

    Poach the chicken breast in simmering water for about 15-20 minutes until fully cooked. Let it cool and shred or chop into bite-sized pieces.

    Wash and Chop the Vegetables

    Wash the leaf lettuce and chop it into bite-sized pieces. Halve the cherry tomatoes, and thinly slice the red onion. Cut the avocado in half, remove the pit, scoop it out, and slice it.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels and crumble into small pieces.

    Prepare Hard Boiled Eggs

    Place the eggs in a pot and cover with water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes. Transfer eggs to cold water, then peel and slice.

Dressing Preparation

    Make the Vinaigrette

    In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey, salt, and black pepper until well combined.

Assembly
