Preparing the Salad

    Dress the Arugula

    In a small bowl, combine lemon juice, olive oil, salt, and pepper. Whisk together until well combined. Pour over the arugula and toss gently to coat.

Cooking the Eggs and Protein

    Cook the Protein

    In a skillet over medium heat, add olive oil. Once hot, add the local protein slices and cook until crispy and browned, about 3-4 minutes per side. Remove from the skillet and set aside.

    Cook the Eggs

    In the same skillet, crack the eggs gently. Cook for about 2-3 minutes until the whites are set but the yolks are still runny. Carefully flip the eggs and cook for an additional 1 minute until the whites are fully cooked.

Assembling the Sandwich

    Toast the Bread and Assemble

    While the eggs are cooking, toast the sourdough slices until golden brown. Once toasted, place a slice on a plate. Top with a slice of white cheddar, followed by the cooked local protein, and then the over-easy eggs. Finish with another slice of cheddar on top.

    Serve the broken yolk sandwich with the lightly dressed arugula on the side for a refreshing contrast.
