Method

Preparation

  1. 1

    Preheat the oven

Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with cooking spray.

  2. 2

    Mix dry ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

  3. 3

    Mix wet ingredients

In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth and fully incorporated.

  4. 4

    Combine mixtures

Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are okay.

  5. 5

    Add blueberries

Gently fold in the fresh blueberries into the batter, reserving a few for topping if desired.

Baking

  1. 6

    Fill muffin tins

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. If you reserved some blueberries, sprinkle them on top of each muffin.

  2. 7

    Bake the muffins

Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  3. 8

    Cool the muffins

Once baked, remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
