    Prepare the Rabbit

    Rinse the rabbit pieces under cold water and pat them dry with paper towels.

    Season the Rabbit

    In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Add the rabbit pieces and toss to coat evenly. Let it marinate for at least 30 minutes.

    Sauté the Vegetables

    In a large skillet or Dutch oven, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add sliced carrots and diced potatoes, cooking for an additional 10 minutes until slightly tender.

    Brown the Rabbit

    In the same skillet, push the vegetables to the side and add the marinated rabbit pieces. Brown them on all sides for about 8-10 minutes.

    Add Liquids

    Pour in the chicken broth and white wine, scraping the bottom of the skillet to deglaze. Bring to a simmer.

    Cook the Rabbit

    Cover the skillet or Dutch oven and reduce the heat to low. Let it cook for about 1.5 hours, or until the rabbit is tender and the vegetables are cooked through.

    Once cooked, remove from heat and let rest for a few minutes. Serve warm, garnished with fresh herbs if desired.
