Preparation

    Prepare the Avocado Spread

    In a bowl, mash the avocado with a fork and season it with salt and pepper to taste. Set aside.

    Make the Cream Cheese Mixture

    In another bowl, mix together the mascarpone cream cheese and crème fraîche until smooth. Set aside.

    Prepare the Vegetables

    Slice the tomatoes, cucumbers, and onion thinly. Set aside.

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Heat the olive oil in a skillet over medium heat and add the potatoes. Cook until golden brown and crispy, about 10-15 minutes. Season with salt and pepper.

    Fry the Eggs

    In a separate skillet, fry the eggs sunny-side-up until the whites are set but the yolks are still runny.

Assembly

    Assemble the Dish

    On each slice of pumpernickel bread, spread a layer of the avocado mixture. Top with smoked salmon, a dollop of the cream cheese mixture, slices of tomatoes, cucumbers, onions, and sprinkle with capers and arugula.

    Place the assembled pumpernickel slices on a plate alongside the sunny-side-up eggs and fried potatoes. Enjoy your Saumon Fume!
