Hummus Preparation

    Make the Hummus

    In a food processor, blend together canned chickpeas, tahini, lemon juice, garlic, olive oil, salt, and water until smooth. Adjust consistency with more water if needed.

    Caramelize the Onions

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced onions and cook until golden brown, about 10 minutes. Set aside.

    Cook the Eggs

    In the same skillet, add more olive oil if needed, and crack in the eggs. Fry until the whites are set but yolks are still runny, about 3-4 minutes.

    Prepare the Fries

    Toss the cut potatoes with 2 tablespoons of olive oil, salt, and black pepper. Bake in a preheated oven at 425°F (220°C) for 25-30 minutes until golden and crispy.

    Fry the Cauliflower

    In a frying pan, heat 1 tablespoon of olive oil and fry the cauliflower florets until golden and tender, about 8-10 minutes.

Assembly

    Assemble the Dish

    Spread the hummus onto a plate. Top with caramelized onions, jalapeño, cooked Lebanese sausage, diced tomatoes, and sliced avocado. Place the fried eggs on top. Serve with house fries and fried cauliflower on the side.
