Method

Preparation of Pain Perdu

    Prepare the Custard

    In a bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.

    Assemble the Pain Perdu

    Spread mascarpone or Nutella on one side of each brioche slice. Sandwich the slices together, with the filling in between.

    Dip and Cook

    Heat butter in a skillet over medium heat. Dip each stuffed brioche in the egg mixture, coating both sides, then place in the skillet. Cook until golden brown on both sides, about 3-4 minutes per side.

Crème Brûlée Bananas

    Caramelize the Bananas

    In a separate skillet, melt butter over medium heat. Slice bananas and place them in the skillet. Sprinkle brown sugar on top and cook until caramelized, about 2-3 minutes per side.

Warm Berry Sauce

    Prepare the Berry Sauce

    In a saucepan, combine mixed berries and honey or maple syrup over medium heat. Cook until the berries start to burst and release their juices, about 5 minutes. Stir gently.

    Add Passion Fruit

    Cut passion fruits in half and scoop out the pulp. Stir the pulp into the berry sauce just before serving.

Assembly

    Serve

    Place the cooked pain perdu on plates, top with caramelized bananas, warm berry sauce, and extra passion fruit pulp. Serve immediately.
