Preparation

    Prepare the Vegetables

    Dice the onion, green bell pepper, and green tomatoes. Peel and cube the sweet potato. Chop the kale and spinach. Cut the cauliflower into florets.

    Cook the Cauliflower

    In a skillet, heat olive oil over medium heat. Add the cauliflower florets and sauté until golden brown. Remove and set aside.

Cooking

    Sauté the Base

    In the same skillet, add more olive oil if necessary. Sauté the onions and green bell pepper until soft, then add the sweet potatoes. Cook until slightly tender.

    Add Greens

    Stir in the green tomatoes, spinach, kale, and fava beans. Cook until the greens are wilted and the sweet potatoes are fully cooked.

    Fry the Eggs

    In a separate pan, fry the eggs over easy in a little olive oil.

Assembly

    Serve

    Plate the vegetable mixture, top with fried eggs, drizzle with carrot tahini sauce, sprinkle with toasted almonds and crumbled goat cheese. Serve with sliced baguette on the side.
