Fish Tacos Preparation

Prepare the Cod
Preheat your oven to 400°F (200°C). In a shallow dish, combine flour, cornmeal, salt, black pepper, and cayenne pepper. In another dish, beat the eggs. Dip each cod fillet into the egg, then coat with the flour mixture. Place on a baking sheet lined with parchment paper.

Bake the Cod
Bake the cod in the preheated oven for 15-20 minutes, or until the fish is flaky and golden brown.

Prepare the Slaw
In a bowl, mix the red cabbage and coleslaw mix. Add a pinch of salt and toss well. Set aside.

Assemble the Tacos
Warm the flour tortillas in a skillet or microwave. On each tortilla, place a piece of baked cod, top with the cabbage slaw, drizzle with sweet pepper aioli, and add green salsa and crumbled queso fresco.

Serve
Serve the tacos with a side of guacamole and tortilla chips. Enjoy!
