    Prepare the Ingredients

    In a skillet over medium heat, melt 1 tablespoon of herbed butter. Add the diced onions and poblano peppers, and sauté until they begin to soften, about 3-4 minutes.

    Cook the Mushrooms and Steak

    Add the sliced mushrooms and shaved rib eye steak to the skillet. Season with salt and black pepper. Cook for another 5-7 minutes until the steak is cooked through and the mushrooms are tender. Remove from heat and set aside.

    Make the Omelet

    In a bowl, whisk together the eggs, a pinch of salt, and black pepper. In a clean skillet, melt the remaining tablespoon of herbed butter over medium heat. Pour in the egg mixture and cook until the edges begin to set, about 2-3 minutes.

    Add Filling

    Once the edges are set, add the steak, onion, and mushroom mixture evenly over one half of the omelet. Sprinkle the Provolone and American cheese on top.

    Finish the Omelet

    Carefully fold the omelet over the filling and cook for another 2-3 minutes until the cheese melts and the eggs are fully cooked. Slide onto a plate.

    Serve the omelet hot with fried potatoes and slices of baguette on the side.
