Chicken and Marinade

Method

Marinating the Chicken

    Prepare the Marinade

    In a bowl, combine olive oil, garlic powder, Italian seasoning, salt, and black pepper.

    Marinate the Chicken

    Place the chicken breasts in the marinade and ensure they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes.

Cooking the Chicken and Mushrooms

    Grill the Chicken

    Preheat a grill or grill pan over medium heat. Remove the chicken from the marinade and place it on the grill. Cook for 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for 5 minutes, then slice.

    Sauté the Mushrooms

    In a skillet, add a little olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes until they are golden brown and tender.

Assembling the Panini

    Make the Sundried Tomato Aioli

    In a small bowl, mix mayonnaise with chopped sundried tomatoes. Set aside.

    Assemble the Panini

    Spread the sundried tomato aioli on one side of each piece of ciabatta bread. Layer sliced grilled chicken, sautéed mushrooms, prosciutto, and mozzarella cheese on one slice. Top with the other slice of bread, aioli side down.

    Grill the Panini

    Preheat a panini press or a skillet over medium heat. If using a skillet, place a heavy pan on top of the sandwich to press it down. Grill for about 4-5 minutes until the bread is golden and the cheese is melted.
