Citrus Vinaigrette

Preparation of Ingredients

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Spinach
Rinse the fresh spinach under cold water and pat it dry with a paper towel.

Chop Vegetables
Chop the cherry tomatoes in half, slice the red onion thinly, and set aside.

Prepare the Olives and Capers
If using whole black olives, slice them into rings. Measure out the capers and set aside.
Making the Citrus Vinaigrette

Combine Ingredients
In a small bowl, whisk together the olive oil, lemon juice, orange juice, honey, salt, and black pepper until well combined.

Taste and Adjust
Taste the vinaigrette and adjust seasoning if necessary. Set aside.
Baking the Salmon

Arrange Salmon
Place the salmon filets on a baking sheet lined with parchment paper or lightly greased.

Add Toppings
Sprinkle the chopped red onions, black olives, capers, and cherry tomatoes over the salmon.

Drizzle Vinaigrette
Drizzle some of the citrus vinaigrette over the salmon filets.

Bake
Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork.
Serving

Plate the Dish
On each plate, create a bed of fresh spinach. Place the baked salmon on top of the spinach.

Garnish
Sprinkle feta cheese over the salmon and drizzle remaining citrus vinaigrette on top.

Serve immediately while warm.
