Cooking Pasta

    Boil Linguine

    In a large pot, bring water to a boil. Add 1 tsp of salt and then add the linguine. Cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once the linguine is cooked, drain the pasta in a colander and set aside.

Preparing Shrimp and Vegetables

    Sauté Vegetables

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add the sliced onions and tri-colored bell peppers. Sauté for about 5 minutes until they are soft and slightly caramelized.

    Cook Shrimp

    Add the peeled and deveined shrimp to the skillet and cook for 3-5 minutes, or until the shrimp turn pink and are cooked through.

Making the Sauce

    Add White Wine

    Pour 1 cup of white wine into the skillet with the shrimp and vegetables. Bring to a simmer and let it reduce for about 2-3 minutes.

    Stir in Pesto

    Add 1 cup of pesto sauce to the skillet and stir until well combined. Allow it to heat through for an additional 2 minutes.

    Combine with Pasta

    Add the drained linguine to the skillet. Toss everything together to ensure the pasta is well coated in the sauce.

    Finish with Cheese and Pepper

    Sprinkle 0.5 cups of grated Parmesan cheese and 0.5 tsp of black pepper over the pasta. Toss again to combine and serve immediately.
