Method

Fried Oysters

    Prepare the Oysters

    Rinse the fresh oysters under cold water and carefully shuck them, retaining the liquid. Set aside.

    Breading Setup

    In three separate bowls, place the flour in one, the beaten eggs mixed with milk in the second, and the cornmeal mixed with salt and black pepper in the third.

    Bread the Oysters

    Dip each oyster first into the flour, then into the egg mixture, and finally coat with cornmeal.

    Fry the Oysters

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded oysters in batches until golden brown, about 2-3 minutes per side. Remove and place on paper towels to drain excess oil.

Spinach and Tasso

    Sauté Spinach and Tasso

    In a large pan, heat the olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add the tasso ham and sauté for another 2 minutes.

    Add Spinach

    Add the fresh spinach to the pan and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Cheese Mixture

    Combine Cheese

    In a mixing bowl, combine ricotta, mozzarella, and Parmesan cheese. Mix until well-blended.

Crema-Rosa Sauce

    Prepare the Sauce

    In a small saucepan, combine heavy cream and tomato sauce over low heat. Stir until warmed through. Add basil, salt, and black pepper, stirring to combine. Simmer for a few minutes to blend the flavors.
