Prepare the Chicken

Season the Chicken
Pat the chicken breasts dry with paper towels. Season both sides with salt and black pepper.

Sauté the Spinach

Heat Olive Oil
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add Spinach
Add the fresh spinach to the skillet, sprinkle with salt and black pepper, and sauté until wilted (about 3-4 minutes).
Prepare the Toppings

Combine Toppings
In a bowl, mix the chopped artichoke hearts, sundried tomatoes, and crumbled goat cheese until well combined.
Make the Lemon Butter Sauce

Melt Butter
In a small saucepan over low heat, melt the unsalted butter.

Add Remaining Ingredients
Stir in the lemon juice, lemon zest, minced garlic, and chopped parsley. Cook for an additional 2-3 minutes, stirring occasionally.
Assemble the Dish

Plate the Dish
On each plate, place a serving of sautéed spinach, top with a grilled chicken breast, and then generously add the artichoke-sundried tomato-goat cheese mixture.

Drizzle the warm lemon butter sauce over the top of each chicken breast before serving.
