Chop the onion and tomato into small pieces. Rinse and chop the romaine lettuce into bite-sized pieces.

In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef along with salt and black pepper. Cook until browned, about 6-8 minutes, breaking it apart with a spatula as it cooks.

Assemble the Wraps
Lay out the sundried tomato wraps on a clean surface. Evenly distribute the cooked beef and onion mixture among the wraps.

Top the beef mixture with chopped tomato, romaine lettuce, and shredded cheddar cheese.

Fold in the sides of the wrap and roll from the bottom to enclose the filling securely. Repeat for all wraps.
